Creamy avocado ice-cream

  • 2 ripe avocados
  • 5 tablespoons of the thick layer of the coconut milk
  • ½ tbsp coconut oil
  • 1 – 2 tsp date syrup or honey
  • ½ tsp vanilla powder
  • ½ lemon


Chopped nuts but chocolate sauce also works nicely.

Mix all the ingredients with a stick blender or in a food processor. Pour the mix into a dish and put in the freezer for 1 hour to be able to eat it straight away and for 5 hours to be able to pack it and bring on a picnic for example. Remember to take it out of the freezer a good while before serving if you have had it frozen for longer than 1 hour.
